Avocado Feta Dip

I love parties. Have I said that before? Possibly the only thing I love more than the party is being well prepared in advance.  This dip helps make that possible. The original recipe which was found on Gather for Bread, called for fresh avocado, but I went one lazy step further and bought a tub of avocado dip.  Just because you bought the cheater version doesn’t mean you can’t class up the presentation by putting it in a pretty bowl and adding a few extra ingredients. I think I stayed pretty true to the original but didn’t add the olive oil or vinegar since I already had a pretty creamy dip. I also omitted the oregano since it reminds me of tomato sauce (not that there’s anything wrong with that).

Since you’re buying the dip, you can pretty much just play it pretty loose and add things until you think it looks and tastes good. Since I put feta on literally everything, I was a huge fan of this dip. Not only did it look and taste fabulous, but I was able to ‘make’ it a few hours prior to the start of the party.

  • 250 ml. Avocado dip
  • 1 bunch Curly fresh parsley, chopped very finely
  • 1 clove Garlic
  • 1/4 cup Onion, chopped finely
  •  1/2 cup diced tomatoes
Baking & Spices
  • Salt and pepper to taste

  • 4 oz Feta cheese, plain

Serve with whatever you like (I’m not bossy), but if you are dying to know what we did, we chose Tostitos, because there’s nothing simpler than opening a bag.
